I’ve heard anecdotally that in many other countries, it’s normal to put ice cubes in wine if you want it cold but haven’t chilled it in the fridge. It was a comment on some cuisine blog, so take that for what it’s worth.

Excellent. The candied cashew recipe can be readily adapted to additional nuts (pecans, almonds, etc.) and you can change the spicing to, say, a commercially-available pumpkin pie or apple pie spice mix. Works a treat!

Point of order. As a person of French extraction, I feel confident in saying that “there is no such thing as *good* Champagne.” Champagne, historically and to this day, is made from B-team white wine (boring second-string Pinot Noir etc.). A much better “Champagne” is Italian Prosecco (less expensive and generally better quality), which makes *brilliant* “Champagne cocktails.” Other sparkling wines from the New World are also exceptionally serviceable. Save money and drink better booze at the same time.

Could not disagree more. Yeah, there’s a lot of industrial swill cranked out in Champagne, but that’s true of any major wine region or type (especially Prosecco). A few years ago, SP and I had the good fortune to visit some small growers there who were producing AMAZING wine that happened to be Champagne.
Best New World sparkler for cocktails: Gruet.
Best non-Champagne sparklers for drinking straight: Sekt and Cremant de Loire.

There are as many ways to mull wine as there are spices in Araby, the key is to not scorch the wine. I usually use a red base and fortify with Armagnac and Grand Marnier.

For reference as well, Armagnac works better (in my opinion) than Cognac if you’re using any pepper in the spice blend. I prefer white pepper and mace, hence the peppery flavor the Armagnac picks up from the Oak is a good add. I’ve always wanted to try long pepper but I have no idea where to find it. Honey is the traditional sweetener but brown sugar works just as well, add enough and you can cover some degree of temperature excursion.

My Mom’s Fudge, also Called Fantasy Fudge
3 cups white sugar
3/4 cup margarine
2/3 cup evaporated milk
1 (12 ounce) package semisweet chocolate chips
1 (7 ounce) jar marshmallow creme
1 cup chopped walnuts
1 teaspoon vanilla extract
Grease a 9×13-inch pan.
Mix sugar, margarine, and evaporated milk in a large, saucepan over medium heat, stirring to dissolve all the sugar. Bring mixture to a full boil for 5 minutes, stirring constantly.
Remove from heat and stir in chocolate chips until melted and thoroughly combined. Beat in marshmallow creme, walnuts, and vanilla extract You can cheat use a mixer if you wish.
Transfer fudge to the prepared pan and let cool before cutting into squares.

The Colorado Democratic Party is considering renaming its annual Jefferson Jackson fundraising dinner, part of a nationwide shift away from the founders of the party.
Chairman Rick Palacio on Monday emailed Democratic activists to ask whether they supported renaming the dinner– and if they did, to solicit suggestions.
“It’s not a move to change the name, it’s simply a conversation I want to have with people around the state,” Palacio said in an interview. “What I want to do is solicit ideas and feedback about whether people even want it to be changed.”
The survey is taking suggestions until Nov. 25 and Palacio said he hopes to make a decision by the end of the year about whether to rename the dinner, which is scheduled for Feb. 13 at the Sheraton Downtown Denver. If Palacio decides to make a change, the party’s members can vote again on the new name.
The 2016 dinner is the 84th annual event and it’s carried the names of the former Presidents Thomas Jefferson and Andrew Jackson since as long as anyone can remember.
But in recent years, concern about the name has increased as the party seeks to distance itself from the controversies of its founders. Palacio’s email to party activists describes the tension:
Jefferson and Jackson lived and served during a time period where slavery was the norm. Both men’s legacies and both men’s fortunes were built and sustained by enslaved human beings. Failure to acknowledge their participation in slavery, or Jackson’s part in removing Native Americans from their lands, would be irresponsible revisions of our American history and the history of our own Democratic Party.
With that acknowledgement, comes the question: should we rename our Jefferson Jackson dinner, or should it remain the same?

They have tons of ideas and patterns/projects on their website, but I’ll shoot you some ideas in the next few days, too.
I do much designing on my computer, and having a Cricut (which OMWC purchased for me as a gift), has made a huge difference. I used to have a Sizzix die cutting machine, but only a hand cranked one, and I had to design and then purchase custom made dies to do my work. The Cricut allows me to design and send it wirelessly to be drawn or cut or embossed on so many kinds of materials. It’s really fabulous.

If you guys and gals like baking, I’d suggest you give clafouti a try (technically, it’s a clafouti if it has cherries, and it’s flaugnarde with any other kind of fruit).
I’ve done this recipe with blackberries, blueberries, and strawberries, and the results have always been great.

For a decade I had a C-suite gig where I had to be at my desk and functioning at a high level by about 0630, six days a week, after a 45 minute commute. It was pure torture the entire 10 years. I never got comfortable with it.

I’m with you on that. I’ve always been a second shift kind of guy. I passionately detest getting out of bed before 9 AM, and my energetic, productive hours seem to be between 6 PM and midnight. It actually works out well for me because I’m doing office work for a company that requires 24/7 staffing (long-term care mail order pharmacy) and second shift is the one that nobody really wants.

I used to teach evenings. It was really just about perfect. I’d get home around midnight, have a few hours to myself before the household awoke. Get them all on their way, then sleep, get up and do my prep work before everyone came home, we’d have dinner, and off I’d go to work.

My productive times are between like 9pm and 3am. It’s nice to work while the world is otherwise calm and silent. I always remember being up late in college, working on a paper, taking my smoke break in the late night solitude. It was bliss for my introverted soul.

My favorite part was getting off work on Friday morning at 7 AM, pouring some Scotch, firing up the BBQ, and watching all the neighbors go to work while I grill a steak.

I don’t meditate in any formal way. Sometimes I try to set some of the spinning wheels in my brain onto mundane tasks like thinking of a song and replaying it in my head, or reciting something I’ve read. Sometimes I bring to mind a movie I saw but didn’t quite “get” so I ponder it until I get bored enough to sleep. Best for me is to read kindle with no internet connection temptation til I fall asleep.

I tried to talk about brain overload to Mr Splosoves one time. I described it as how “ya know” how you have multiple spinning wheels in your mind, oriented back to front, not left to right or right to left, and you have that one wheel in the center that you are trying to think about, but sometimes the other wheels get brighter and noisier, so you have to shift to them? And how the shiny undulating paths out in front are parallel but shifting and sometimes it’s just brighter than others? He looked at me like I was insane.
I have never brought it up again to him or anyone else. I really thought there was a decent chance other people’s brains looked liked that to themselves. Now I realize how weird it is to have a mental image of one’s own brain/thoughts.

I often think the incubation stage of thinking/creating is the most overlooked. I have trained myself to let it happen, even if my conscious brain wants to jump on the first solution. Sometimes it leads to more complete or fully developed answers. Sometimes it just leads to procrastination.

Help me, Glibs!!
I just baked a round loaf of dark rye inside of my Dutch oven, and it’s stuck. I only have about an inch of space between the loaf and the side of the Dutch oven, so I can’t slip a knife or spatula under there like I usually do. I’ve tried prying at the edges, but it seems to be mashing the sides of the bread in rather than making any headway towards prying it loose.
The Dutch oven is sitting upside-down right now and I’m hoping it will fall out on its own, but do you have any tricks for this? It looks and smells beautiful – something that is rare for my rye bread experiments – so I really don’t want to ruin this loaf.

Sadly, I think your best bet is to cut it in half. You can take about a one-inch wide section out of the middle and then you can get under the other sides to pry it out.
Sadly, the bottom crust did break off, but not too much. I just placed the crust section back on and put the loaf on a rack, so hopefully that will limit the moisture loss. The frustrating thing is that it was only stuck around the edges. That’s probably because I sprayed water on it prior to baking, and it must have pooled around the sides and resulted in a flour-water slurry that cemented the crust to the pan as it baked. I’m definitely doing parchment paper next time.
Still, it’s looks and smells great. I think it will be fine (although not perfect). This is my second Dutch oven loaf, and I love how the crust comes out.

Well I think it was sweet that those Colorado dems were kind and fair enough to cup both sets of balls.
I’m just stopping at the liquor store Friday after work and buying Dad some wine. Probably a box of Riesling since his taste buds aren’t sophisticated enough to tell the difference between that and the more expensive German Rieslings.
My late Mom would take our really nice, aged reds and add ice cubes to them. She also was infamous for adding generic diet ginger ale to any good sipping bourbon that was left at her house by Webdominatrix.
I don’t make enough to buy “nice, aged reds”. 🙁
At least the reds I buy have mostly been enjoyable.
Then there was the one time my father bought me a “white merlot”.

Excellent. The candied cashew recipe can be readily adapted to additional nuts (pecans, almonds, etc.) and you can change the spicing to, say, a commercially-available pumpkin pie or apple pie spice mix. Works a treat!

Absolutely. Nearly any nuts can work for all three recipes. These are just what I normally use.

As a person of French extraction, I feel confident in saying that “there is no such thing as *good* Champagne.” Champagne, historically and to this day, is made from B-team white wine (boring second-string Pinot Noir etc.). A much better “Champagne” is Italian Prosecco (less expensive and generally better quality), which makes *brilliant* “Champagne cocktails.” Other sparkling wines from the New World are also exceptionally serviceable. Save money and drink better booze at the same time.

Could not disagree more. Yeah, there’s a lot of industrial swill cranked out in Champagne, but that’s true of any major wine region or type (especially Prosecco). A few years ago, SP and I had the good fortune to visit some small growers there who were producing AMAZING wine that happened to be Champagne.

Also, sort of OT? Has anyone here made spiced wine before? I had it when I was in Prague awhile ago and really want to share the love, I have a general recipe, but am looking more for any prep notes or variations I might have missed.
There are as many ways to mull wine as there are spices in Araby, the key is to not scorch the wine. I usually use a red base and fortify with Armagnac and Grand Marnier.

For reference as well, Armagnac works better (in my opinion) than Cognac if you’re using any pepper in the spice blend. I prefer white pepper and mace, hence the peppery flavor the Armagnac picks up from the Oak is a good add. I’ve always wanted to try long pepper but I have no idea where to find it. Honey is the traditional sweetener but brown sugar works just as well, add enough and you can cover some degree of temperature excursion.
Oh and I do like the idea of spiciness. Will definitely try it.

My Mom’s Fudge, also Called Fantasy Fudge
3 cups white sugar
3/4 cup margarine
2/3 cup evaporated milk
1 (12 ounce) package semisweet chocolate chips
1 (7 ounce) jar marshmallow creme
1 cup chopped walnuts
1 teaspoon vanilla extract
Grease a 9×13-inch pan.
Mix sugar, margarine, and evaporated milk in a large, saucepan over medium heat, stirring to dissolve all the sugar. Bring mixture to a full boil for 5 minutes, stirring constantly.
Remove from heat and stir in chocolate chips until melted and thoroughly combined. Beat in marshmallow creme, walnuts, and vanilla extract You can cheat use a mixer if you wish.
Transfer fudge to the prepared pan and let cool before cutting into squares.

I gave my boy his first bb gun on his 4th birthday. That’s how I have taught him marksmanship. he used that marksmanship to kill two deer this year.

I do much designing on my computer, and having a Cricut (which OMWC purchased for me as a gift), has made a huge difference. I used to have a Sizzix die cutting machine, but only a hand cranked one, and I had to design and then purchase custom made dies to do my work. The Cricut allows me to design and send it wirelessly to be drawn or cut or embossed on so many kinds of materials. It’s really fabulous.

I’m recently night shift. It’s odd (but not unpleasant), then again I’m working in a warehouse.
For a decade I had a C-suite gig where I had to be at my desk and functioning at a high level by about 0630, six days a week, after a 45 minute commute. It was pure torture the entire 10 years. I never got comfortable with it.
More and more, I’m coming to believe that one should adapt one’s life to one’s natural sleep patterns instead of trying to force one’s sleep habits into the requirements of the rest of the world. My health and mental outlook improved greatly when I returned to what was for me a more natural rhythm.
I have always been a night owl, so that helps some. Of course in dream land I’d been spending the night writing not fucking about at a warehouse.
In dream land, I’d win the lottery and do my creative work from a villa in Italy! I may or may not allow OMWC to come along and cook for me.

I’m being very generous, really. He doesn’t even speak Italian. But he makes a damn fine pizza.

I’m with you on that. I’ve always been a second shift kind of guy. I passionately detest getting out of bed before 9 AM, and my energetic, productive hours seem to be between 6 PM and midnight. It actually works out well for me because I’m doing office work for a company that requires 24/7 staffing (long-term care mail order pharmacy) and second shift is the one that nobody really wants.
I used to teach evenings. It was really just about perfect. I’d get home around midnight, have a few hours to myself before the household awoke. Get them all on their way, then sleep, get up and do my prep work before everyone came home, we’d have dinner, and off I’d go to work.
My productive times are between like 9pm and 3am. It’s nice to work while the world is otherwise calm and silent. I always remember being up late in college, working on a paper, taking my smoke break in the late night solitude. It was bliss for my introverted soul.
Yes, I did also enjoy my brief excursion on third shift at the factory where I used to work.
My favorite part was getting off work on Friday morning at 7 AM, pouring some Scotch, firing up the BBQ, and watching all the neighbors go to work while I grill a steak.

My wife also has that. If she woken in the wee hours it takes a lot to go back to sleep. Me? I can sleep until something wakes me (and it takes a lot to wake me.)
Yeah, I tend to be up when awakened. I can’t turn it on and off like others (like my wife).
OMWC can go to sleep whenever he wants to, but he sometimes has trouble staying asleep. And then if his brain starts, well, that’s all she wrote.
It’s not uncommon for him to be coming down for the day at 0300 when I’m ready to go up to bed. We pass on the stairs.

I don’t meditate in any formal way. Sometimes I try to set some of the spinning wheels in my brain onto mundane tasks like thinking of a song and replaying it in my head, or reciting something I’ve read. Sometimes I bring to mind a movie I saw but didn’t quite “get” so I ponder it until I get bored enough to sleep. Best for me is to read kindle with no internet connection temptation til I fall asleep.
I run story scenarios in my head, plot lines, especially for BS projects I know I’ll never complete. It’s just a way to wear my mind out.
I tried to talk about brain overload to Mr Splosoves one time. I described it as how “ya know” how you have multiple spinning wheels in your mind, oriented back to front, not left to right or right to left, and you have that one wheel in the center that you are trying to think about, but sometimes the other wheels get brighter and noisier, so you have to shift to them? And how the shiny undulating paths out in front are parallel but shifting and sometimes it’s just brighter than others? He looked at me like I was insane.
I have never brought it up again to him or anyone else. I really thought there was a decent chance other people’s brains looked liked that to themselves. Now I realize how weird it is to have a mental image of one’s own brain/thoughts.
See, this is why I am awake.

In seriousness though, I like the multiple wheels in general. Sometimes one that is working on a low level task (I can’t control them but I can influence them) will suddenly brighten up with the answer to a calculus problem from 3 days ago that I didn’t even realize I was still working on. Weird.

I often think the incubation stage of thinking/creating is the most overlooked. I have trained myself to let it happen, even if my conscious brain wants to jump on the first solution. Sometimes it leads to more complete or fully developed answers. Sometimes it just leads to procrastination.

I just baked a round loaf of dark rye inside of my Dutch oven, and it’s stuck. I only have about an inch of space between the loaf and the side of the Dutch oven, so I can’t slip a knife or spatula under there like I usually do. I’ve tried prying at the edges, but it seems to be mashing the sides of the bread in rather than making any headway towards prying it loose.
The Dutch oven is sitting upside-down right now and I’m hoping it will fall out on its own, but do you have any tricks for this? It looks and smells beautiful – something that is rare for my rye bread experiments – so I really don’t want to ruin this loaf.
Have you tried attaching a spray straw to some spray butter? Organic cook WD 40.
I might try that next time.
I sprinkled some cornmeal down, but I guess I should have used more. I was stingy with it this time because the last loaf had a crust of cornmeal on the bottom that I didn’t care for.
I should have just laid down a square of parchment paper.
I generally use cooking spray, then parchment, then cooking spray if I’m baking in a dutch oven.
Sadly, I think your best bet is to cut it in half. You can take about a one-inch wide section out of the middle and then you can get under the other sides to pry it out.

Sadly, the bottom crust did break off, but not too much. I just placed the crust section back on and put the loaf on a rack, so hopefully that will limit the moisture loss. The frustrating thing is that it was only stuck around the edges. That’s probably because I sprayed water on it prior to baking, and it must have pooled around the sides and resulted in a flour-water slurry that cemented the crust to the pan as it baked. I’m definitely doing parchment paper next time.
Still, it’s looks and smells great. I think it will be fine (although not perfect). This is my second Dutch oven loaf, and I love how the crust comes out.
That looks tasty af, as the kids say. I’m a fan of dark rye, both drink and bread but never tried Dutch oven bread.

I’m a big fan of Big Island Candies for gifts – special delivery, UPS with cooling pads, etc – and insanely tasty. (Helps that I got to tour the factory in Hilo in 2014).
